On the last day of a trip there, as teenagers, a friend and I begged a local to find us the right kind of tea to attempt to reproduce it ourselves back home. He looked at us as though we were slightly mad, but obliged and came back with a proud parcel of black Assam Tea. Delighted with the purchase, it wasn’t until we got home and unpacked it that we realised that he’d simply given us a packet of plain black tea; wonderful stuff, of course, but the glory of Masala Chai is in its additions, which are added into the stove-top pan while it’s brewed. The tea leaves themselves are only the starting point – they come alive through the addition of cardamom (one of the most beautifully scented spices in the entire world) and other spices (usually clove, cinnamon and ginger), plus plenty of sugar.
